Ingredients
- Dried fava beans - 100 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Water - 800 milliliters
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 4 hours or overnight.
- Drain the soaked fava beans and place them in a pot with 800 ml of fresh water. Bring to a boil, then reduce the heat and simmer for 30 minutes until tender.
- Add the canned chickpeas, minced garlic, ground cumin, paprika, salt, and black pepper to the pot. Stir well and cook for an additional 10 minutes.
- Using an immersion blender, puree the mixture until smooth. If the soup is too thick, add more water to reach your desired consistency.
- Remove the pot from heat and stir in the lemon juice.
- Serve hot, drizzled with olive oil and garnished with fresh parsley.
