Ingredients

  • Water - 750 ml

  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - a handful, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Rinse the split peas under cold water until the water runs clear.
  2. In a large pot, combine the rinsed split peas and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and add the minced garlic, cumin, paprika, salt, and black pepper.
  4. Cover the pot and let it simmer for about 30 minutes or until the split peas are tender.
  5. Remove from heat and use an immersion blender to puree the mixture until smooth. If it's too thick, add a bit more water until the desired consistency is reached.
  6. Taste and adjust the seasoning if necessary.
