Ingredients
- Dried fava beans - 150 grams
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
- After soaking, drain the beans and place them in a pot with 500 milliliters of fresh water. Bring to a boil and then reduce to a simmer.
- Cook the fava beans for about 30-40 minutes or until they are tender. Add more water if necessary to keep the beans submerged.
- Once cooked, drain any excess water and let the beans cool slightly.
- In a blender or food processor, combine the cooked fava beans, minced garlic, cumin powder, paprika, salt, black pepper, and lemon juice. Blend until smooth, adding olive oil gradually to achieve a creamy consistency.
- Taste and adjust seasoning if necessary, then transfer the bissara to a serving bowl.
- Drizzle with a little extra olive oil and sprinkle with chopped parsley before serving.
