Ingredients

  • Dried fava beans - 150 grams
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
  2. After soaking, drain the beans and place them in a pot with 500 milliliters of fresh water. Bring to a boil and then reduce to a simmer.
  3. Cook the fava beans for about 30-40 minutes or until they are tender. Add more water if necessary to keep the beans submerged.
  4. Once cooked, drain any excess water and let the beans cool slightly.
  5. In a blender or food processor, combine the cooked fava beans, minced garlic, cumin powder, paprika, salt, black pepper, and lemon juice. Blend until smooth, adding olive oil gradually to achieve a creamy consistency.
  6. Taste and adjust seasoning if necessary, then transfer the bissara to a serving bowl.
  7. Drizzle with a little extra olive oil and sprinkle with chopped parsley before serving.
