Ingredients
- Dried fava beans - 200 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
- Drain the soaked beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium heat.
- Reduce the heat and let the beans simmer for about 30 minutes or until they are tender.
- Once cooked, drain the beans and set aside a few for garnish.
- In the same pot, add the cooked beans, minced garlic, cumin powder, coriander powder, paprika, salt, and black pepper.
- Pour in 500 ml of water and blend the mixture with an immersion blender until smooth and creamy. Adjust the consistency by adding more water if needed.
- Stir in the lemon juice and taste for seasoning, adjusting salt and pepper as necessary.
- Serve the bissara hot in bowls, drizzled with olive oil and garnished with reserved fava beans and fresh parsley.
