Ingredients
- Dried fava beans - 100 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Soak the dried fava beans in water overnight, then drain and rinse them.
- In a pot, combine the soaked fava beans and 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the beans are soft.
- Once the fava beans are cooked, drain any excess water and transfer them to a blender or food processor.
- Add the minced garlic, cumin, paprika, salt, and black pepper to the blender with the fava beans. Blend until smooth, adding a little water if needed to reach a creamy consistency.
- Return the mixture to the pot and heat gently over low heat, stirring in the olive oil and lemon juice. Adjust seasoning to taste.
- Serve the Bissara warm, garnished with chopped fresh parsley and a drizzle of olive oil.
