Ingredients

  • Dried fava beans - 100 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the dried fava beans in water overnight, then drain and rinse them.
  2. In a pot, combine the soaked fava beans and 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the beans are soft.
  3. Once the fava beans are cooked, drain any excess water and transfer them to a blender or food processor.
  4. Add the minced garlic, cumin, paprika, salt, and black pepper to the blender with the fava beans. Blend until smooth, adding a little water if needed to reach a creamy consistency.
  5. Return the mixture to the pot and heat gently over low heat, stirring in the olive oil and lemon juice. Adjust seasoning to taste.
  6. Serve the Bissara warm, garnished with chopped fresh parsley and a drizzle of olive oil.
