Ingredients
- Dried fava beans - 200 grams
- Water - 750 ml
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons, plus extra for drizzling
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges for serving
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 6 hours or overnight.
- After soaking, drain and rinse the beans again, then place them in a large pot with 750 ml of fresh water.
- Bring the water to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender.
- Once cooked, drain the beans and return them to the pot. Add the minced garlic, cumin, coriander, paprika, and salt.
- Pour in 500 ml of water and use an immersion blender to blend the mixture until smooth and creamy, adding more water if needed to reach your desired consistency.
- Stir in the olive oil and allow the bissara to heat through for a few minutes, adjusting the seasoning as necessary.
- Serve hot, drizzled with extra olive oil, topped with chopped parsley, and accompanied by lemon wedges and crusty bread.
