Ingredients

  • Dried fava beans - 200 grams
  • Water - 750 ml
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons, plus extra for drizzling
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges for serving

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 6 hours or overnight.
  2. After soaking, drain and rinse the beans again, then place them in a large pot with 750 ml of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender.
  4. Once cooked, drain the beans and return them to the pot. Add the minced garlic, cumin, coriander, paprika, and salt.
  5. Pour in 500 ml of water and use an immersion blender to blend the mixture until smooth and creamy, adding more water if needed to reach your desired consistency.
  6. Stir in the olive oil and allow the bissara to heat through for a few minutes, adjusting the seasoning as necessary.
  7. Serve hot, drizzled with extra olive oil, topped with chopped parsley, and accompanied by lemon wedges and crusty bread.
