- Almond flour - 100 grams
- All-purpose flour - 50 grams
- Powdered sugar - 50 grams
- Baking powder - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Coconut oil - 40 grams, melted
- Aquafaba (chickpea brine) - 3 tablespoons
- Vanilla extract - 1 teaspoon
- Sesame seeds - 20 grams, for garnish
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, all-purpose flour, powdered sugar, baking powder, ground cinnamon, and salt.
- In a separate bowl, whisk together the melted coconut oil, aquafaba, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too crumbly, add a little more aquafaba, one teaspoon at a time.
- Divide the dough into small balls, about the size of a walnut, and flatten them slightly.
- Place the flattened dough on the prepared baking sheet and sprinkle sesame seeds on top, gently pressing them into the dough.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on a wire rack before serving.
