Ingredients

  • Almond flour - 100 grams
  • All-purpose flour - 50 grams
  • Powdered sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Coconut oil - 40 grams, melted
  • Aquafaba (chickpea brine) - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Sesame seeds - 20 grams, for garnish

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, all-purpose flour, powdered sugar, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, aquafaba, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too crumbly, add a little more aquafaba, one teaspoon at a time.
  5. Divide the dough into small balls, about the size of a walnut, and flatten them slightly.
  6. Place the flattened dough on the prepared baking sheet and sprinkle sesame seeds on top, gently pressing them into the dough.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let them cool on a wire rack before serving.
