- Dried fava beans - 150 grams
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 500 milliliters
Steps
- Soak the dried fava beans in water overnight, then rinse and drain.
- In a pot, combine the soaked fava beans and 500 ml of water. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the beans are tender.
- Drain the beans and transfer them to a blender. Add olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice.
- Blend until smooth, adding a little water if necessary to achieve a creamy consistency.
- Taste and adjust seasoning if needed, then transfer to a serving bowl.
- Garnish with chopped parsley and a drizzle of olive oil before serving.
