Ingredients

  • Dried fava beans - 150 grams
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 500 milliliters

Steps

  1. Soak the dried fava beans in water overnight, then rinse and drain.
  2. In a pot, combine the soaked fava beans and 500 ml of water. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the beans are tender.
  3. Drain the beans and transfer them to a blender. Add olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice.
  4. Blend until smooth, adding a little water if necessary to achieve a creamy consistency.
  5. Taste and adjust seasoning if needed, then transfer to a serving bowl.
  6. Garnish with chopped parsley and a drizzle of olive oil before serving.
