- Almond flour - 150 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Water - 50 ml
- Zucchini - 100 grams, diced
- Bell pepper - 50 grams, diced
- Garlic - 2 cloves, minced
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the almond flour, egg, olive oil, salt, and water. Mix until a dough forms.
- Knead the dough on a clean surface for about 2-3 minutes until smooth. Let it rest for 10 minutes.
- Roll the dough out to about 2-3 mm thickness and cut it into small strips to create noodles.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced zucchini and bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Add the cumin, paprika, black pepper, and stir well to combine with the vegetables.
- Bring a pot of salted water to a boil and add the almond flour noodles. Cook for about 2-3 minutes until they float to the surface.
- Drain the noodles and add them to the skillet with the sautéed vegetables. Toss well to combine and heat through for another 2 minutes.
- Garnish with fresh parsley before serving.
