Steps
- In a mixing bowl, combine almond flour and water, mixing until a dough forms. Let it rest for 10 minutes.
- In a medium skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic, diced zucchini, and bell pepper to the skillet. Cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
- On a clean surface, roll out the almond flour dough into small, flat discs, about 1/4 inch thick.
- In a separate pan, cook the flat discs on medium heat for about 2-3 minutes on each side until golden brown.
- Serve the warm flat discs topped with the vegetable mixture and garnish with chopped parsley.
