Ingredients

  • Beetroot - 200 grams, cooked and grated
  • Chickpeas - 100 grams, rinsed and drained
  • Red onion - 1 small, finely chopped
  • Fresh mint - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Oats - 50 grams, ground into flour
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2 (dairy-free)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the grated beetroot, chickpeas, red onion, mint, cilantro, and minced garlic.
  3. Add the cumin, coriander, chili powder, ground oats, salt, and pepper to the mixture. Mix well until fully combined.
  4. Using your hands, form the mixture into two burger patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they are golden brown.
  6. Transfer the patties to a baking sheet and place them in the preheated oven for an additional 10 minutes to ensure they are cooked through.
  7. While the patties are baking, toast the burger buns in the same skillet until golden.
  8. Assemble the burgers by placing each beetroot patty on a toasted bun. Optionally, add extra mint leaves or your favorite toppings.
