- Beetroot - 200 grams, cooked and grated
- Chickpeas - 100 grams, rinsed and drained
- Red onion - 1 small, finely chopped
- Fresh mint - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Oats - 50 grams, ground into flour
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2 (dairy-free)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the grated beetroot, chickpeas, red onion, mint, cilantro, and minced garlic.
- Add the cumin, coriander, chili powder, ground oats, salt, and pepper to the mixture. Mix well until fully combined.
- Using your hands, form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they are golden brown.
- Transfer the patties to a baking sheet and place them in the preheated oven for an additional 10 minutes to ensure they are cooked through.
- While the patties are baking, toast the burger buns in the same skillet until golden.
- Assemble the burgers by placing each beetroot patty on a toasted bun. Optionally, add extra mint leaves or your favorite toppings.
