- Beets - 400 grams, peeled and diced
- Carrot - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.
- Add the diced carrot and beets to the pot, stirring to combine with the onion and garlic. Cook for an additional 5 minutes.
- Stir in the cumin, coriander, and cinnamon, allowing the spices to toast for about 1 minute.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 25 minutes, or until the beets and carrots are tender.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
