Ingredients

  • Beets - 400 grams, peeled and diced
  • Carrot - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.
  2. Add the diced carrot and beets to the pot, stirring to combine with the onion and garlic. Cook for an additional 5 minutes.
  3. Stir in the cumin, coriander, and cinnamon, allowing the spices to toast for about 1 minute.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 25 minutes, or until the beets and carrots are tender.
  5. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
