- Beef chuck, cubed - 400 grams
- Olive oil - 2 tablespoons
- Onion, diced - 1 medium
- Garlic, minced - 3 cloves
- Carrot, sliced - 1 medium
- Red bell pepper, chopped - 1 medium
- Zucchini, sliced - 1 medium
- Canned chickpeas, drained - 200 grams
- Tomato paste - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro, chopped - 2 tablespoons
- Water - 500 milliliters
Steps
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add diced onion and minced garlic, sautéing until the onion is translucent.
- Stir in the cubed beef and brown on all sides for about 5-7 minutes.
- Add the sliced carrot, chopped red bell pepper, and zucchini, cooking for another 5 minutes.
- Mix in the tomato paste, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper.
- Pour in the water and add the drained chickpeas, stirring to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for about 60 minutes until the beef is tender.
- Remove from heat and stir in chopped cilantro before serving.
