Ingredients

  • Beef chuck, cubed - 400 grams
  • Olive oil - 2 tablespoons
  • Onion, diced - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, sliced - 1 medium
  • Red bell pepper, chopped - 1 medium
  • Zucchini, sliced - 1 medium
  • Canned chickpeas, drained - 200 grams
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Water - 500 milliliters

Steps

  1. Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add diced onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the cubed beef and brown on all sides for about 5-7 minutes.
  4. Add the sliced carrot, chopped red bell pepper, and zucchini, cooking for another 5 minutes.
  5. Mix in the tomato paste, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper.
  6. Pour in the water and add the drained chickpeas, stirring to combine all ingredients.
  7. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for about 60 minutes until the beef is tender.
  8. Remove from heat and stir in chopped cilantro before serving.
