  • Honey - 1 tablespoon
  • Almonds - 30 grams, toasted and chopped
  • Fresh coriander - for garnish

Steps

  1. Heat olive oil in a tagine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the beef stew meat to the pot, browning it on all sides for about 5-7 minutes.
  5. Incorporate the cinnamon stick, ground cumin, ground ginger, ground coriander, paprika, salt, and black pepper, stirring well to coat the meat.
  6. Pour in the beef broth, add the prunes, and drizzle with honey; bring the mixture to a gentle simmer.
  7. Cover the pot with a lid, reduce the heat to low, and let it cook for 60 minutes, stirring occasionally.
  8. After 60 minutes, check the meat for tenderness; it should be fork-tender. If necessary, cook for an additional 15-20 minutes.
  9. Once done, remove the cinnamon stick and stir in the toasted almonds.
