  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef broth - 250 ml
  • Dried apricots - 50 grams, chopped
  • Almonds - 30 grams, sliced
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the cubed beef to the pot and brown on all sides, about 8-10 minutes.
  5. Sprinkle in cumin, cinnamon, ginger, paprika, salt, and black pepper; stir to coat the beef evenly.
  6. Pour in the beef broth and add the chopped dried apricots. Bring to a simmer.
  7. Cover the pot and reduce heat to low. Cook for 45 minutes, stirring occasionally, until the beef is tender.
  8. Once the beef is cooked, remove the lid and let it simmer for an additional 5 minutes to thicken the sauce.
  9. Serve hot, garnished with sliced almonds and fresh cilantro.
