Ingredients

  • Beef chuck, cubed - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, sliced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Canned chickpeas, drained - 1 cup
  • Dried apricots, chopped - 50 grams
  • Chicken or beef broth - 250 ml
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, cinnamon, paprika, ginger, salt, and black pepper, cooking for another minute until fragrant.
  4. Add the cubed beef and brown on all sides, about 5-7 minutes.
  5. Add the sliced carrot, diced red bell pepper, chopped dried apricots, and drained chickpeas to the pot.
  6. Pour in the broth and bring the mixture to a gentle simmer.
  7. Cover and cook on low heat for about 40 minutes, stirring occasionally, until the beef is tender.
  8. Once cooked, remove from heat and stir in fresh cilantro and lemon juice before serving.
