- Beef chuck, cubed - 300 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 3 cloves
- Carrot, sliced - 1 medium
- Red bell pepper, diced - 1 medium
- Canned chickpeas, drained - 1 cup
- Dried apricots, chopped - 50 grams
- Chicken or beef broth - 250 ml
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Paprika - 1 teaspoon
- Ginger powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, cinnamon, paprika, ginger, salt, and black pepper, cooking for another minute until fragrant.
- Add the cubed beef and brown on all sides, about 5-7 minutes.
- Add the sliced carrot, diced red bell pepper, chopped dried apricots, and drained chickpeas to the pot.
- Pour in the broth and bring the mixture to a gentle simmer.
- Cover and cook on low heat for about 40 minutes, stirring occasionally, until the beef is tender.
- Once cooked, remove from heat and stir in fresh cilantro and lemon juice before serving.
