Ingredients
- Basmati rice - 150 grams
- Beef (ground or diced) - 250 grams
- Almonds (sliced) - 50 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Beef broth - 300 ml
- Fresh coriander - a handful, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, ground beef, cumin, cinnamon, turmeric, salt, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
- Once the beef is cooked, add the beef broth to the pan and bring to a boil.
- Drain the soaked rice and add it to the beef mixture. Stir gently to combine, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the broth.
- Meanwhile, in a dry skillet, toast the sliced almonds over medium heat for about 3-5 minutes until golden and fragrant, stirring frequently.
- Once the rice is cooked, fluff it with a fork and serve topped with the toasted almonds and fresh coriander.
