Ingredients

  • Basmati rice - 150 grams
  • Beef (ground or diced) - 250 grams
  • Almonds (sliced) - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Beef broth - 300 ml
  • Fresh coriander - a handful, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, ground beef, cumin, cinnamon, turmeric, salt, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
  4. Once the beef is cooked, add the beef broth to the pan and bring to a boil.
  5. Drain the soaked rice and add it to the beef mixture. Stir gently to combine, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the broth.
  6. Meanwhile, in a dry skillet, toast the sliced almonds over medium heat for about 3-5 minutes until golden and fragrant, stirring frequently.
  7. Once the rice is cooked, fluff it with a fork and serve topped with the toasted almonds and fresh coriander.
