Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Instant yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt and pepper - to taste

Steps

  1. In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil, kneading until a soft dough forms.
  2. Cover the dough with a damp cloth and let it rise for 30 minutes in a warm place until doubled in size.
  3. In a skillet over medium heat, add a splash of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
  4. Add the diced zucchini and red bell pepper, cooking for another 5 minutes until softened. Stir in the cumin, paprika, salt, and pepper.
  5. Mix in the cooked chickpeas and cilantro, followed by the lemon juice. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
  6. Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a flat circle, about 1 cm thick.
  7. Place a generous spoonful of the vegetable mixture in the center of each circle. Fold the edges over the filling to create a pocket and pinch to seal.
  8. Heat a non-stick skillet over medium heat. Cook each stuffed bread for about 4-5 minutes on each side until golden brown and cooked through.
  9. Serve warm, cut in half to reveal the delicious filling.
