Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Instant yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt and pepper - to taste
Steps
- In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil, kneading until a soft dough forms.
- Cover the dough with a damp cloth and let it rise for 30 minutes in a warm place until doubled in size.
- In a skillet over medium heat, add a splash of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced zucchini and red bell pepper, cooking for another 5 minutes until softened. Stir in the cumin, paprika, salt, and pepper.
- Mix in the cooked chickpeas and cilantro, followed by the lemon juice. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
- Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a flat circle, about 1 cm thick.
- Place a generous spoonful of the vegetable mixture in the center of each circle. Fold the edges over the filling to create a pocket and pinch to seal.
- Heat a non-stick skillet over medium heat. Cook each stuffed bread for about 4-5 minutes on each side until golden brown and cooked through.
- Serve warm, cut in half to reveal the delicious filling.
