Ingredients

  • Batbout (Moroccan bread) - 2 pieces
  • Zucchini - 100 grams, diced
  • Bell pepper (red or yellow) - 100 grams, diced
  • Carrot - 50 grams, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cheese (feta or goat) - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced zucchini, bell pepper, and grated carrot to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the cumin, paprika, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
  5. Fold in the chopped parsley and crumbled cheese if using, mixing well to combine.
  6. Carefully slice the batbout in half horizontally to create pockets. Stuff each batbout with the vegetable mixture, pressing gently to close.
  7. Place the stuffed batbout on a baking sheet. Bake in the preheated oven for 10-12 minutes or until the bread is lightly golden.
  8. Remove from the oven, let cool slightly, then serve warm.
