- Batbout (Moroccan bread) - 2 pieces
- Zucchini - 100 grams, diced
- Bell pepper (red or yellow) - 100 grams, diced
- Carrot - 50 grams, grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Cheese (feta or goat) - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced zucchini, bell pepper, and grated carrot to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the cumin, paprika, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
- Fold in the chopped parsley and crumbled cheese if using, mixing well to combine.
- Carefully slice the batbout in half horizontally to create pockets. Stuff each batbout with the vegetable mixture, pressing gently to close.
- Place the stuffed batbout on a baking sheet. Bake in the preheated oven for 10-12 minutes or until the bread is lightly golden.
- Remove from the oven, let cool slightly, then serve warm.
