Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Carrot - 100 grams, grated
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a bowl, mix the warm water with the active dry yeast and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. In the meantime, heat a skillet over medium heat and add a splash of olive oil. Sauté the onion and garlic until translucent.
  5. Add the diced zucchini, red bell pepper, and grated carrot to the skillet. Sprinkle with cumin, paprika, and black pepper. Cook for about 10 minutes until the vegetables are tender.
  6. Remove from heat and stir in the chopped parsley. Allow the filling to cool slightly.
  7. Preheat your oven to 200°C (400°F).
  8. Once the dough has risen, divide it into two equal pieces. Roll each piece into a flat round shape about 1 cm thick.
  9. Place a generous amount of the vegetable filling in the center of each round, fold the edges over to seal, and then gently flatten them back into a round shape.
  10. Place the filled batbout on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15 minutes until golden brown.
