- Whole wheat flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Carrot - 100 grams, grated
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a bowl, mix the warm water with the active dry yeast and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- In the meantime, heat a skillet over medium heat and add a splash of olive oil. Sauté the onion and garlic until translucent.
- Add the diced zucchini, red bell pepper, and grated carrot to the skillet. Sprinkle with cumin, paprika, and black pepper. Cook for about 10 minutes until the vegetables are tender.
- Remove from heat and stir in the chopped parsley. Allow the filling to cool slightly.
- Preheat your oven to 200°C (400°F).
- Once the dough has risen, divide it into two equal pieces. Roll each piece into a flat round shape about 1 cm thick.
- Place a generous amount of the vegetable filling in the center of each round, fold the edges over to seal, and then gently flatten them back into a round shape.
- Place the filled batbout on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15 minutes until golden brown.
