Ingredients
- Chicken thighs - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almond flour - 100 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Water - 0.5 liters
Steps
- In a large skillet, heat olive oil over medium heat and add chopped onion. Sauté until translucent, about 5 minutes.
- Add minced garlic, ground cinnamon, ginger, turmeric, paprika, salt, and black pepper to the onion. Cook for another 2 minutes until fragrant.
- Add the chicken thighs to the skillet and pour in the water. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes until the chicken is tender.
- Remove the chicken from the skillet and let cool slightly. Shred the chicken using two forks, discarding the bones.
- Return the shredded chicken to the skillet, add chopped parsley, cilantro, and lemon juice. Mix well and cook for another 5 minutes to allow the flavors to combine. Remove from heat and let cool.
- Preheat the oven to 180°C (350°F). In a bowl, mix the almond flour with the egg to form a dough.
- On a baking sheet lined with parchment paper, spread the almond flour dough into a thin layer, shaping it into a circle. Bake for about 10 minutes until lightly golden and firm.
- Remove the dough from the oven and let it cool slightly. Place the chicken mixture in the center of the dough and fold the edges over to create a parcel.
- Return the Bastilla to the oven and bake for an additional 10 minutes until heated through and the top is golden brown.
- Serve hot, garnished with additional chopped herbs if desired.
