Ingredients

  • Chicken thighs - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almond flour - 100 grams
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Water - 0.5 liters

Steps

  1. In a large skillet, heat olive oil over medium heat and add chopped onion. Sauté until translucent, about 5 minutes.
  2. Add minced garlic, ground cinnamon, ginger, turmeric, paprika, salt, and black pepper to the onion. Cook for another 2 minutes until fragrant.
  3. Add the chicken thighs to the skillet and pour in the water. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes until the chicken is tender.
  4. Remove the chicken from the skillet and let cool slightly. Shred the chicken using two forks, discarding the bones.
  5. Return the shredded chicken to the skillet, add chopped parsley, cilantro, and lemon juice. Mix well and cook for another 5 minutes to allow the flavors to combine. Remove from heat and let cool.
  6. Preheat the oven to 180°C (350°F). In a bowl, mix the almond flour with the egg to form a dough.
  7. On a baking sheet lined with parchment paper, spread the almond flour dough into a thin layer, shaping it into a circle. Bake for about 10 minutes until lightly golden and firm.
  8. Remove the dough from the oven and let it cool slightly. Place the chicken mixture in the center of the dough and fold the edges over to create a parcel.
  9. Return the Bastilla to the oven and bake for an additional 10 minutes until heated through and the top is golden brown.
  10. Serve hot, garnished with additional chopped herbs if desired.
