Ingredients

  • Phyllo pastry - 4 sheets
  • Chicken breast - 200 grams, cooked and shredded
  • Almonds - 30 grams, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the shredded chicken, chopped cilantro, parsley, chopped almonds, cinnamon, ginger, cumin, nutmeg, salt, and pepper. Cook for 5 minutes, then remove from heat and let cool slightly.
  5. Lay one sheet of phyllo pastry on a baking sheet and brush lightly with olive oil. Layer another sheet on top and brush again with oil. Repeat for a total of 2 sheets.
  6. Spread the chicken mixture evenly over the phyllo layers, leaving a small border around the edges.
  7. Fold the edges of the phyllo over the filling to create a rectangle, sealing the edges with the beaten egg.
  8. Place another two sheets of phyllo on top, brushing each with olive oil, then fold over the edges again to seal.
  9. Brush the top layer with the remaining beaten egg and cut into slices.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  11. Remove from the oven, let cool slightly, dust with powdered sugar, and serve warm.
