Steps
- Cook the pasta according to package instructions until al dente, drain, and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the chicken breast to the skillet, season with salt, pepper, cinnamon, ginger, turmeric, and cumin, and cook until the chicken is browned and cooked through, about 10-12 minutes.
- Remove the chicken from the skillet, let it cool slightly, then shred it using two forks.
- Add the sliced almonds to the skillet and toast them for about 2-3 minutes, then add the shredded chicken back to the skillet.
- Stir in the chopped parsley, cilantro, lemon juice, and cooked pasta, mixing well to combine all ingredients.
- In a separate bowl, beat the eggs and pour them over the pasta mixture, stirring quickly to incorporate the eggs evenly without scrambling them.
- Remove from heat once the eggs are set, about 2-3 minutes.
