Ingredients

  • Chicken breast, boneless and skinless - 200 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Almonds, sliced - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Eggs - 2 large
  • Butter - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Powdered sugar - 1 tablespoon (for garnish)

Steps

  1. Cook the pasta according to package instructions until al dente, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken breast to the skillet, season with salt, pepper, cinnamon, ginger, turmeric, and cumin, and cook until the chicken is browned and cooked through, about 10-12 minutes.
  5. Remove the chicken from the skillet, let it cool slightly, then shred it using two forks.
  6. Add the sliced almonds to the skillet and toast them for about 2-3 minutes, then add the shredded chicken back to the skillet.
  7. Stir in the chopped parsley, cilantro, lemon juice, and cooked pasta, mixing well to combine all ingredients.
  8. In a separate bowl, beat the eggs and pour them over the pasta mixture, stirring quickly to incorporate the eggs evenly without scrambling them.
  9. Remove from heat once the eggs are set, about 2-3 minutes.
