Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 250 grams, cooked and shredded
  • Almonds - 50 grams, sliced
  • Butter - 30 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large, beaten

Steps

  1. In a skillet, melt the butter over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the shredded chicken, cinnamon, ginger, turmeric, paprika, salt, and black pepper. Cook for 5-7 minutes until the chicken is heated through and well coated with spices.
  4. Add the spiralized zucchini to the skillet and toss to combine with the chicken mixture. Cook for another 5 minutes until the zucchini is slightly softened but still al dente.
  5. Remove from heat and stir in the beaten egg and chopped parsley until fully combined.
  6. In a separate pan, toast the sliced almonds over medium heat until golden brown, about 3-4 minutes.
  7. Serve the Bastilla Noodles in bowls, topped with the toasted almonds for an added crunch.
