Ingredients
- Zucchini - 2 medium, spiralized
- Chicken breast - 250 grams, cooked and shredded
- Almonds - 50 grams, sliced
- Butter - 30 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large, beaten
Steps
- In a skillet, melt the butter over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the shredded chicken, cinnamon, ginger, turmeric, paprika, salt, and black pepper. Cook for 5-7 minutes until the chicken is heated through and well coated with spices.
- Add the spiralized zucchini to the skillet and toss to combine with the chicken mixture. Cook for another 5 minutes until the zucchini is slightly softened but still al dente.
- Remove from heat and stir in the beaten egg and chopped parsley until fully combined.
- In a separate pan, toast the sliced almonds over medium heat until golden brown, about 3-4 minutes.
- Serve the Bastilla Noodles in bowls, topped with the toasted almonds for an added crunch.
