Ingredients

  • Chicken thighs - 300 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Almonds - 50 grams, toasted and chopped
  • Eggs - 2, beaten
  • Phyllo pastry sheets - 4
  • Olive oil - 2 tablespoons
  • Water - 200 ml

Steps

  1. In a bowl, combine chicken thighs with onion, garlic, cinnamon, ginger, turmeric, paprika, salt, and black pepper. Let it marinate for at least 15 minutes.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated chicken and cook until browned, about 8-10 minutes.
  3. Add water to the skillet, cover, and simmer for 20 minutes or until the chicken is cooked through and tender.
  4. Remove the chicken from the skillet and shred it once cooled. Mix in the chopped cilantro, parsley, almonds, and beaten eggs.
  5. Preheat the oven to 180°C (350°F). Lay out two sheets of phyllo pastry on a clean surface, brushing each layer with olive oil.
  6. Place half of the chicken mixture in the center of the pastry, fold the edges over to enclose the filling, and shape into a round parcel.
  7. Repeat with the remaining pastry and filling to create a second bastilla.
  8. Transfer the bastillas to a baking tray and bake for 20-25 minutes or until golden and crispy.
  9. Serve warm, garnished with powdered sugar and cinnamon if desired.
