Ingredients
- Chicken thighs - 300 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Almonds - 50 grams, toasted and chopped
- Eggs - 2, beaten
- Phyllo pastry sheets - 4
- Olive oil - 2 tablespoons
- Water - 200 ml
Steps
- In a bowl, combine chicken thighs with onion, garlic, cinnamon, ginger, turmeric, paprika, salt, and black pepper. Let it marinate for at least 15 minutes.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated chicken and cook until browned, about 8-10 minutes.
- Add water to the skillet, cover, and simmer for 20 minutes or until the chicken is cooked through and tender.
- Remove the chicken from the skillet and shred it once cooled. Mix in the chopped cilantro, parsley, almonds, and beaten eggs.
- Preheat the oven to 180°C (350°F). Lay out two sheets of phyllo pastry on a clean surface, brushing each layer with olive oil.
- Place half of the chicken mixture in the center of the pastry, fold the edges over to enclose the filling, and shape into a round parcel.
- Repeat with the remaining pastry and filling to create a second bastilla.
- Transfer the bastillas to a baking tray and bake for 20-25 minutes or until golden and crispy.
- Serve warm, garnished with powdered sugar and cinnamon if desired.
