Ingredients
- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almond flour - 100 grams
- Egg - 1 large
- Chopped fresh parsley - 2 tablespoons
- Chopped fresh cilantro - 2 tablespoons
- Lemon juice - 1 tablespoon
- Sliced almonds - 30 grams
- Water - 0.5 liters
Steps
- Heat the olive oil in a skillet over medium heat and add the chopped onion. Cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs to the skillet along with cumin, cinnamon, paprika, salt, and pepper. Cook for about 10-15 minutes until browned on all sides.
- Pour in 0.5 liters of water, cover, and simmer on low heat for 25 minutes until the chicken is cooked through and tender.
- Remove the chicken from the skillet, shred it using two forks, and set aside to cool slightly.
- In a mixing bowl, combine the shredded chicken, chopped parsley, cilantro, lemon juice, and half of the sliced almonds.
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- In a separate bowl, mix the almond flour with the egg until a dough forms.
- Line a baking dish with parchment paper and spread half of the almond flour dough evenly on the bottom.
- Layer the chicken mixture on top of the dough, then spread the remaining almond flour dough over the chicken, sealing the edges.
- Sprinkle the remaining sliced almonds on top and bake in the preheated oven for 20-25 minutes until golden brown.
- Allow to cool for a few minutes before slicing and serving.
