Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almond flour - 100 grams
  • Egg - 1 large
  • Chopped fresh parsley - 2 tablespoons
  • Chopped fresh cilantro - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sliced almonds - 30 grams
  • Water - 0.5 liters

Steps

  1. Heat the olive oil in a skillet over medium heat and add the chopped onion. Cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the chicken thighs to the skillet along with cumin, cinnamon, paprika, salt, and pepper. Cook for about 10-15 minutes until browned on all sides.
  4. Pour in 0.5 liters of water, cover, and simmer on low heat for 25 minutes until the chicken is cooked through and tender.
  5. Remove the chicken from the skillet, shred it using two forks, and set aside to cool slightly.
  6. In a mixing bowl, combine the shredded chicken, chopped parsley, cilantro, lemon juice, and half of the sliced almonds.
  7. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  8. In a separate bowl, mix the almond flour with the egg until a dough forms.
  9. Line a baking dish with parchment paper and spread half of the almond flour dough evenly on the bottom.
  10. Layer the chicken mixture on top of the dough, then spread the remaining almond flour dough over the chicken, sealing the edges.
  11. Sprinkle the remaining sliced almonds on top and bake in the preheated oven for 20-25 minutes until golden brown.
  12. Allow to cool for a few minutes before slicing and serving.
