Ingredients

  • Ground chicken - 250 grams
  • Almonds (sliced) - 30 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Egg - 1 large
  • Phyllo pastry sheets - 4
  • Butter (melted) - 30 grams
  • Honey - 1 tablespoon
  • Lettuce (for serving) - 2 leaves
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1/2 medium
  • Yogurt (for sauce) - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet over medium heat, sauté the chopped onions and minced garlic in a little oil until translucent.
  3. Add the ground chicken to the skillet and cook until browned, breaking it apart with a spatula.
  4. Stir in cinnamon, cumin, paprika, salt, black pepper, and chopped parsley. Cook for another 3-4 minutes.
  5. Remove from heat and let cool slightly. Once cooled, mix in the sliced almonds and beaten egg until well combined.
  6. Lay one sheet of phyllo pastry on a clean surface, brush with melted butter, and layer another sheet on top. Repeat for a total of 2 layers.
  7. Spoon half of the chicken mixture into the center of the phyllo pastry, and fold the edges over to create a parcel. Brush the top with more melted butter.
  8. Repeat the process for the second burger.
  9. Place the parcels on a baking tray lined with parchment paper and bake for 20-25 minutes or until golden brown.
  10. While the burgers bake, mix the yogurt with lemon juice, and a pinch of salt to create a sauce.
  11. Once cooked, let the burgers rest for a few minutes before slicing in half. Serve on a bed of lettuce, topped with tomato and cucumber slices, and drizzle with yogurt sauce.
