- Chicken breast - 250 grams, diced
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine diced chicken, minced garlic, chopped onion, cilantro, cumin, cinnamon, paprika, salt, black pepper, olive oil, and lemon juice. Mix well and let marinate for 15 minutes.
- Preheat a grill or grill pan over medium heat.
- Shape the marinated chicken mixture into small bite-sized patties, about 3 cm in diameter.
- In a separate bowl, whisk the egg. Dip each chicken patty into the egg, then coat with almond flour for a crispy exterior.
- Place the patties on the heated grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let them rest for a few minutes before serving.
