Ingredients

  • Rice paper sheets - 6
  • White fish fillets (such as cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Egg - 1, beaten
  • Powdered sugar - for garnish
  • Ground cinnamon - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the fish fillets to the skillet and cook for about 5-7 minutes until the fish is cooked through and flakes easily. Remove from heat.
  5. Flake the cooked fish with a fork and mix in the chopped cilantro, parsley, ground cumin, ground cinnamon, salt, pepper, and lemon juice. Allow the mixture to cool slightly.
  6. Soften the rice paper sheets in warm water for a few seconds until pliable. Lay them flat on a clean surface.
  7. Place a portion of the fish mixture in the center of each rice paper sheet and fold the edges over to create a parcel. Repeat for all sheets.
  8. Brush a baking dish with olive oil and arrange the fish parcels in the dish. Brush the tops with the beaten egg.
  9. Bake in the preheated oven for about 20 minutes, or until the parcels are golden and crispy.
  10. Remove from the oven, let cool slightly, and then dust with powdered sugar and ground cinnamon before serving.
