Ingredients
- Rice paper sheets - 6
- White fish fillets (such as cod or haddock) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Egg - 1, beaten
- Powdered sugar - for garnish
- Ground cinnamon - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the fish fillets to the skillet and cook for about 5-7 minutes until the fish is cooked through and flakes easily. Remove from heat.
- Flake the cooked fish with a fork and mix in the chopped cilantro, parsley, ground cumin, ground cinnamon, salt, pepper, and lemon juice. Allow the mixture to cool slightly.
- Soften the rice paper sheets in warm water for a few seconds until pliable. Lay them flat on a clean surface.
- Place a portion of the fish mixture in the center of each rice paper sheet and fold the edges over to create a parcel. Repeat for all sheets.
- Brush a baking dish with olive oil and arrange the fish parcels in the dish. Brush the tops with the beaten egg.
- Bake in the preheated oven for about 20 minutes, or until the parcels are golden and crispy.
- Remove from the oven, let cool slightly, and then dust with powdered sugar and ground cinnamon before serving.
