Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Raisins - 50 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1 small
- Cumin seeds - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin seeds, cinnamon stick, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the grains with the oil and spices.
- Pour in the 300 ml of water and add the raisins. Bring to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, remove the cinnamon stick, and garnish with chopped fresh parsley before serving.
