Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Raisins - 50 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon stick - 1 small
  • Cumin seeds - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh parsley - 2 tablespoons for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin seeds, cinnamon stick, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the grains with the oil and spices.
  5. Pour in the 300 ml of water and add the raisins. Bring to a boil, then reduce the heat to low and cover the saucepan.
  6. Simmer for 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork, remove the cinnamon stick, and garnish with chopped fresh parsley before serving.
