Ingredients

  • Basmati rice - 150 grams
  • Chicken breast - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 300 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and red bell pepper to the skillet. Cook for another 3-4 minutes until the vegetables are softened.
  4. Stir in the diced chicken breast, cumin, cinnamon, turmeric, salt, and black pepper. Cook until the chicken is browned on all sides, approximately 5-7 minutes.
  5. Drain the soaked rice and add it to the skillet. Stir well to coat the rice with the spices and mix with the chicken and vegetables.
  6. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15 minutes or until the rice is tender and the liquid has been absorbed.
  7. Once cooked, fluff the rice with a fork and stir in the chopped parsley. Serve with lemon wedges on the side.
