- Basmati rice - 150 grams
- Chicken breast - 300 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 300 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and red bell pepper to the skillet. Cook for another 3-4 minutes until the vegetables are softened.
- Stir in the diced chicken breast, cumin, cinnamon, turmeric, salt, and black pepper. Cook until the chicken is browned on all sides, approximately 5-7 minutes.
- Drain the soaked rice and add it to the skillet. Stir well to coat the rice with the spices and mix with the chicken and vegetables.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15 minutes or until the rice is tender and the liquid has been absorbed.
- Once cooked, fluff the rice with a fork and stir in the chopped parsley. Serve with lemon wedges on the side.
