Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Raisins - 30 grams
  • Almonds - 30 grams, toasted and chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, diced carrot, and bell pepper, and cook for another 5 minutes until the vegetables soften.
  4. Add the cumin, cinnamon, turmeric, and salt to the pot, stirring well to coat the vegetables with the spices.
  5. Drain the soaked rice and add it to the pot, mixing it with the vegetables and spices for 1-2 minutes.
  6. Pour in the 400 milliliters of water and add the raisins. Bring to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for 15 minutes, or until the rice is cooked and the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork and stir in the toasted almonds and fresh parsley before serving.
