Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - 1 tablespoon (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
  3. In a mixing bowl, combine the grated zucchini, chickpea flour, chopped parsley, chopped mint, minced garlic, cumin, coriander, paprika, salt, black pepper, and the egg. Mix until well combined.
  4. Form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
  5. Brush the tops of the fritters lightly with olive oil.
  6. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crisp.
  7. Remove from the oven and allow to cool slightly before serving.
