Ingredients
- Zucchini - 300 grams
- Chickpea flour - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Olive oil - 1 tablespoon (for brushing)
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
- In a mixing bowl, combine the grated zucchini, chickpea flour, chopped parsley, chopped mint, minced garlic, cumin, coriander, paprika, salt, black pepper, and the egg. Mix until well combined.
- Form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
- Brush the tops of the fritters lightly with olive oil.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crisp.
- Remove from the oven and allow to cool slightly before serving.
