Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the zucchini thoroughly and slice them into 1 cm thick rounds.
  3. In a large mixing bowl, combine the olive oil, ground cumin, ground coriander, paprika, garlic powder, salt, and black pepper.
  4. Add the zucchini slices to the bowl and toss them well in the spice mixture until evenly coated.
  5. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and slightly golden.
  7. Remove from the oven and drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
