Ingredients

  • Gluten-free couscous - 150 grams
  • Vegetable broth - 400 ml
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas (canned) - 100 grams, drained and rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, red bell pepper, carrot, red onion, and garlic. Drizzle with olive oil, and sprinkle with cumin, coriander, paprika, salt, and black pepper. Toss until the vegetables are well coated.
  3. Spread the vegetables evenly on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly caramelized.
  4. While the vegetables are roasting, bring the vegetable broth to a boil in a medium saucepan. Stir in the gluten-free couscous, remove from heat, cover, and let sit for 5 minutes.
  5. Fluff the couscous with a fork and add the roasted vegetables and chickpeas. Stir in fresh parsley and lemon juice, mixing gently to combine.
  6. Transfer the couscous mixture to a baking dish and bake in the oven for an additional 10 minutes to allow the flavors to meld.
  7. Remove from the oven, let cool slightly, and serve warm.
