Ingredients

  • Sweet potatoes - 400 grams
  • Canned chickpeas - 240 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Diced tomatoes - 200 grams (canned or fresh)
  • Vegetable broth - 100 ml
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, for serving

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, combine the sweet potatoes, olive oil, cumin, coriander, paprika, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  4. Spread the sweet potatoes on a baking tray and roast in the preheated oven for 25 minutes, or until tender and slightly caramelized.
  5. While the sweet potatoes are roasting, heat a skillet over medium heat. Add the diced red onion and sauté for 5 minutes until softened.
  6. Add the minced garlic and sauté for an additional minute until fragrant.
  7. Stir in the chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer and cook for 10 minutes to allow the flavors to meld.
  8. Once the sweet potatoes are done, combine them with the chickpea mixture in the skillet. Stir gently to combine and heat through for another 5 minutes.
  9. Serve the tagine hot, garnished with fresh cilantro and a squeeze of lemon juice.
