- Sweet potatoes - 400 grams
- Canned chickpeas - 240 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Diced tomatoes - 200 grams (canned or fresh)
- Vegetable broth - 100 ml
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon - 1, for serving
Steps
- Preheat your oven to 200°C (400°F).
- Peel and cube the sweet potatoes into bite-sized pieces.
- In a large bowl, combine the sweet potatoes, olive oil, cumin, coriander, paprika, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes on a baking tray and roast in the preheated oven for 25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, heat a skillet over medium heat. Add the diced red onion and sauté for 5 minutes until softened.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer and cook for 10 minutes to allow the flavors to meld.
- Once the sweet potatoes are done, combine them with the chickpea mixture in the skillet. Stir gently to combine and heat through for another 5 minutes.
- Serve the tagine hot, garnished with fresh cilantro and a squeeze of lemon juice.
