- Fresh spinach - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chickpea flour - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Egg - 1 large
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Puff pastry sheets - 2 (thawed if frozen)
- Sesame seeds - 1 tablespoon (for topping)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the cooked spinach mixture, chickpea flour, crumbled feta cheese, beaten egg, chopped cilantro, cumin, salt, and black pepper. Mix well until all ingredients are combined.
- Roll out one puff pastry sheet and place it on a baking dish, letting the edges hang over. Spoon the spinach mixture into the center of the pastry.
- Fold the edges of the puff pastry over the filling, pinching to seal. Roll out the second pastry sheet and cover the filling, sealing the edges again.
- Prick the top of the pie with a fork to allow steam to escape. Brush the top with olive oil and sprinkle sesame seeds over it.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and flaky.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
