Ingredients

  • Fresh spinach - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chickpea flour - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Egg - 1 large
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Puff pastry sheets - 2 (thawed if frozen)
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  5. In a large bowl, combine the cooked spinach mixture, chickpea flour, crumbled feta cheese, beaten egg, chopped cilantro, cumin, salt, and black pepper. Mix well until all ingredients are combined.
  6. Roll out one puff pastry sheet and place it on a baking dish, letting the edges hang over. Spoon the spinach mixture into the center of the pastry.
  7. Fold the edges of the puff pastry over the filling, pinching to seal. Roll out the second pastry sheet and cover the filling, sealing the edges again.
  8. Prick the top of the pie with a fork to allow steam to escape. Brush the top with olive oil and sprinkle sesame seeds over it.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and flaky.
  10. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
