- Fresh spinach - 300 grams
- Feta cheese - 150 grams, crumbled
- Eggs - 2 large
- Greek yogurt - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the eggs, Greek yogurt, paprika, cumin, salt, and black pepper until well combined.
- Stir the crumbled feta cheese into the spinach mixture, then add the egg mixture and combine thoroughly.
- Transfer the mixture to a greased baking dish and spread it evenly. Sprinkle toasted pine nuts on top.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and set.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
