Ingredients

  • Fresh spinach - 300 grams
  • Feta cheese - 150 grams, crumbled
  • Eggs - 2 large
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, whisk together the eggs, Greek yogurt, paprika, cumin, salt, and black pepper until well combined.
  5. Stir the crumbled feta cheese into the spinach mixture, then add the egg mixture and combine thoroughly.
  6. Transfer the mixture to a greased baking dish and spread it evenly. Sprinkle toasted pine nuts on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and set.
  8. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
