Ingredients

  • Fresh spinach - 300 grams
  • Chickpeas - 200 grams, cooked
  • Feta cheese - 100 grams, crumbled
  • Eggs - 2 large
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, stirring occasionally, about 3-4 minutes.
  4. In a large bowl, combine the cooked chickpeas, sautéed spinach mixture, crumbled feta cheese, cumin, paprika, salt, and pepper. Mix well.
  5. In another bowl, beat the eggs and then fold them into the spinach and chickpea mixture until fully combined.
  6. Transfer the mixture to a greased baking dish and spread it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is slightly golden.
  8. Remove from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
