- Fresh spinach - 300 grams
- Chickpeas - 200 grams, cooked
- Feta cheese - 100 grams, crumbled
- Eggs - 2 large
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.
- Add the fresh spinach to the skillet and cook until wilted, stirring occasionally, about 3-4 minutes.
- In a large bowl, combine the cooked chickpeas, sautéed spinach mixture, crumbled feta cheese, cumin, paprika, salt, and pepper. Mix well.
- In another bowl, beat the eggs and then fold them into the spinach and chickpea mixture until fully combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
