- Cauliflower - 400 grams, cut into florets
- Chickpeas - 200 grams, canned, drained and rinsed
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the cauliflower florets and chickpeas.
- In a small bowl, whisk together the olive oil, ground cumin, ground coriander, smoked paprika, turmeric, cinnamon, salt, and black pepper.
- Pour the spice mixture over the cauliflower and chickpeas, tossing to coat evenly.
- Spread the mixture on a baking sheet lined with parchment paper in a single layer.
- Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through the cooking time.
- Once baked, remove from the oven and drizzle with lemon juice. Garnish with fresh parsley before serving.
