Ingredients

  • Canned chickpeas - 200 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the peeled and cut carrot sticks, chickpeas, olive oil, cumin, coriander, paprika, cinnamon, salt, and black pepper. Toss until the carrots and chickpeas are well coated.
  3. Spread the mixture evenly on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
