Ingredients

  • Medium potatoes - 2
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the potatoes under cold water and pat them dry.
  3. Prick each potato with a fork several times to allow steam to escape during baking.
  4. In a small bowl, mix the olive oil, paprika, ground cumin, garlic powder, salt, and black pepper.
  5. Rub the spice mixture all over the potatoes, ensuring they are well coated.
  6. Place the potatoes directly on the oven rack or on a baking sheet.
  7. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender when pierced with a fork.
  8. While the potatoes are baking, prepare the tahini sauce by whisking together tahini, lemon juice, and water in a small bowl until smooth.
  9. Once the potatoes are done, remove them from the oven and let them cool slightly before slicing them open.
  10. Drizzle the tahini sauce over the potatoes and sprinkle with chopped parsley before serving.
