Ingredients

  • Potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped
  • Filo pastry - 6 sheets
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the potatoes, then boil them in salted water until tender, about 15 minutes. Drain and mash until smooth.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 5 minutes.
  4. Stir in the cumin, paprika, salt, and black pepper, cooking for another minute. Remove from heat and mix in the mashed potatoes and chopped parsley until well combined.
  5. Lay one sheet of filo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with oil.
  6. Cut the layered filo sheets into 3 equal strips. Place a tablespoon of the potato filling at one end of each strip and fold over to form a triangle, sealing the filling inside. Continue folding to create a triangular shape until reaching the end of the strip.
  7. Place the bourekas on a parchment-lined baking sheet and brush the tops with the beaten egg.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  9. Remove from the oven and let cool slightly before serving.
