Ingredients

  • Large Portobello mushrooms - 4 pieces
  • Olive oil - 2 tablespoons
  • Garlic cloves, minced - 2
  • Fresh parsley, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Pine nuts, toasted - 2 tablespoons
  • Feta cheese, crumbled - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Clean the mushrooms by wiping them with a damp cloth and remove the stems.
  3. In a small bowl, mix together the olive oil, minced garlic, chopped parsley, cumin, paprika, salt, black pepper, and lemon juice.
  4. Brush the mixture generously over the mushrooms, making sure to coat both the tops and the insides.
  5. Place the mushrooms on a baking sheet, gill side up, and sprinkle the toasted pine nuts and crumbled feta cheese on top.
  6. Bake the mushrooms in the preheated oven for 15-20 minutes, or until they are tender and the cheese is golden.
  7. Remove from the oven and let cool slightly before serving.
