Ingredients
- Large Portobello mushrooms - 4 pieces
- Olive oil - 2 tablespoons
- Garlic cloves, minced - 2
- Fresh parsley, chopped - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Pine nuts, toasted - 2 tablespoons
- Feta cheese, crumbled - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Clean the mushrooms by wiping them with a damp cloth and remove the stems.
- In a small bowl, mix together the olive oil, minced garlic, chopped parsley, cumin, paprika, salt, black pepper, and lemon juice.
- Brush the mixture generously over the mushrooms, making sure to coat both the tops and the insides.
- Place the mushrooms on a baking sheet, gill side up, and sprinkle the toasted pine nuts and crumbled feta cheese on top.
- Bake the mushrooms in the preheated oven for 15-20 minutes, or until they are tender and the cheese is golden.
- Remove from the oven and let cool slightly before serving.
