Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 50 grams, chopped
  • Raisins - 50 grams
  • Honey - 2 tablespoons
  • Chicken or vegetable broth - 200 milliliters
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large ovenproof pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Add the lamb cubes to the pot and brown them on all sides.
  4. Stir in the ground cumin, cinnamon, ginger powder, coriander, turmeric, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
  5. Add the chopped almonds, raisins, honey, and broth to the pot. Mix well.
  6. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
  7. Bake for 60 minutes, then remove the lid/foil and bake for an additional 15-20 minutes until the lamb is tender and the sauce is slightly thickened.
  8. Garnish with chopped fresh cilantro before serving.
