Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ginger powder - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 50 grams, chopped
- Raisins - 50 grams
- Honey - 2 tablespoons
- Chicken or vegetable broth - 200 milliliters
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large ovenproof pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the ground cumin, cinnamon, ginger powder, coriander, turmeric, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
- Add the chopped almonds, raisins, honey, and broth to the pot. Mix well.
- Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 60 minutes, then remove the lid/foil and bake for an additional 15-20 minutes until the lamb is tender and the sauce is slightly thickened.
- Garnish with chopped fresh cilantro before serving.
