Ingredients

  • Merguez sausages - 4 pieces (about 400g)
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Canned chickpeas - 200g, drained and rinsed
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a large mixing bowl, combine the sliced red bell pepper, zucchini, red onion, minced garlic, drained chickpeas, olive oil, paprika, cumin, coriander, salt, and black pepper. Toss well to coat the vegetables and chickpeas evenly.
  3. Spread the vegetable and chickpea mixture in a single layer on a baking tray.
  4. Place the merguez sausages on top of the vegetables.
  5. Bake in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender, stirring halfway through the cooking time.
  6. Remove from the oven, garnish with chopped fresh parsley, and serve hot.
