Ingredients

  • Fennel bulbs - 2 medium
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon - 1 (juiced)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Trim the tops off the fennel bulbs and cut them in half lengthwise. Remove the core and slice each half into wedges.
  3. In a large mixing bowl, combine the chickpeas, sliced fennel, olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper. Toss well to coat everything evenly.
  4. Transfer the mixture to a baking dish and spread it out in an even layer.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the fennel is tender and lightly caramelized.
  7. Remove from the oven and drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
