- Fennel bulbs - 2 medium
- Canned chickpeas - 240 grams (drained and rinsed)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Lemon - 1 (juiced)
Steps
- Preheat the oven to 200°C (400°F).
- Trim the tops off the fennel bulbs and cut them in half lengthwise. Remove the core and slice each half into wedges.
- In a large mixing bowl, combine the chickpeas, sliced fennel, olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper. Toss well to coat everything evenly.
- Transfer the mixture to a baking dish and spread it out in an even layer.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the fennel is tender and lightly caramelized.
- Remove from the oven and drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
