Ingredients

  • Fresh spinach - 200 grams
  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in the ground cumin, paprika, salt, and black pepper.
  4. Remove the skillet from heat and transfer the spinach mixture into a greased baking dish.
  5. Make four small wells in the spinach mixture and crack an egg into each well.
  6. Sprinkle the crumbled feta cheese evenly over the eggs and spinach.
