- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in the ground cumin, paprika, salt, and black pepper.
- Remove the skillet from heat and transfer the spinach mixture into a greased baking dish.
- Make four small wells in the spinach mixture and crack an egg into each well.
- Sprinkle the crumbled feta cheese evenly over the eggs and spinach.
- Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolks reach your desired doneness.
