Ingredients

  • olive oil - 2 tablespoons
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • bell pepper - 1 medium, diced
  • canned diced tomatoes - 400 grams
  • ground cumin - 1 teaspoon
  • ground paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • eggs - 4 large
  • feta cheese - 100 grams, crumbled
  • fresh parsley - 2 tablespoons, chopped
  • fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a tagine or a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and diced bell pepper, and cook for another 3-4 minutes until the bell pepper softens.
  5. Stir in the canned diced tomatoes, ground cumin, paprika, salt, and black pepper. Simmer for 10 minutes, allowing the flavors to meld.
  6. Using a spoon, make four small wells in the tomato mixture and crack an egg into each well.
  7. Sprinkle the crumbled feta cheese over the top of the eggs.
  8. Transfer the tagine or skillet to the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
  9. Remove from the oven and garnish with chopped parsley and cilantro before serving.
