Ingredients
- olive oil - 2 tablespoons
- onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- bell pepper - 1 medium, diced
- canned diced tomatoes - 400 grams
- ground cumin - 1 teaspoon
- ground paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- eggs - 4 large
- feta cheese - 100 grams, crumbled
- fresh parsley - 2 tablespoons, chopped
- fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a tagine or a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced bell pepper, and cook for another 3-4 minutes until the bell pepper softens.
- Stir in the canned diced tomatoes, ground cumin, paprika, salt, and black pepper. Simmer for 10 minutes, allowing the flavors to meld.
- Using a spoon, make four small wells in the tomato mixture and crack an egg into each well.
- Sprinkle the crumbled feta cheese over the top of the eggs.
- Transfer the tagine or skillet to the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven and garnish with chopped parsley and cilantro before serving.
