Ingredients
- Eggplant - 1 medium
- Chickpeas (cooked) - 200 grams
- Fresh parsley - 30 grams
- Garlic - 2 cloves
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato sauce - 100 grams
- Feta cheese (optional) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplant lengthwise into thin strips, about 0.5 cm thick, and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
- Rinse the eggplant strips under cold water and pat dry with a paper towel.
- In a bowl, mash the cooked chickpeas using a fork or potato masher. Add finely chopped parsley, minced garlic, cumin, paprika, salt, and black pepper. Mix well to combine.
- Brush both sides of the eggplant slices with olive oil and place them on a baking sheet lined with parchment paper.
- Bake the eggplant slices in the preheated oven for about 15 minutes or until they are tender and slightly golden.
- Remove the eggplant from the oven and let it cool slightly. Take one slice, place a spoonful of the chickpea mixture at one end, and roll it up tightly. Repeat with the remaining slices.
- Spread the tomato sauce on the bottom of a baking dish, place the eggplant rolls seam-side down, and top with any remaining chickpea mixture.
- If desired, crumble feta cheese over the rolls. Bake for an additional 15 minutes until heated through.
- Serve warm, garnished with extra parsley if desired.
