Ingredients

  • Eggplant - 1 medium
  • Chickpeas (cooked) - 200 grams
  • Fresh parsley - 30 grams
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato sauce - 100 grams
  • Feta cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant lengthwise into thin strips, about 0.5 cm thick, and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant strips under cold water and pat dry with a paper towel.
  4. In a bowl, mash the cooked chickpeas using a fork or potato masher. Add finely chopped parsley, minced garlic, cumin, paprika, salt, and black pepper. Mix well to combine.
  5. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet lined with parchment paper.
  6. Bake the eggplant slices in the preheated oven for about 15 minutes or until they are tender and slightly golden.
  7. Remove the eggplant from the oven and let it cool slightly. Take one slice, place a spoonful of the chickpea mixture at one end, and roll it up tightly. Repeat with the remaining slices.
  8. Spread the tomato sauce on the bottom of a baking dish, place the eggplant rolls seam-side down, and top with any remaining chickpea mixture.
  9. If desired, crumble feta cheese over the rolls. Bake for an additional 15 minutes until heated through.
  10. Serve warm, garnished with extra parsley if desired.
